Key Responsibilities:
  • Working with the Head Chef and the kitchen team to maintain high standards in the quality of food both as to its preparation and its presentation.
  • Working in all areas of the kitchen depending on the daily needs of Head Chef.
  • To observe all Company Food Hygiene and Health and Safety policy.
  • To assist the Head Chef, to check the completeness of all food and kitchen equipment sent to each function.
  • Work with the Executive chef to ensure standards and goals are met.
  • Ensure all required risk assessments and due diligence documentation are implemented in regard to food hygiene and safe systems of work, as are required in order to pass any internal audits.
  • To set out, maintain and monitor high standards of cooking and presentation.
  • To be aware of current food trends with regard to presentation and style and help with new menu ideas and menu design.
  • Coordinate the selection, training, development, and evaluation of employees and managers in the Kitchen & Stewarding departments through effective management and leadership to ensure that established cultural and core standards are met.
  • Ensuring that all completed food is correctly wrapped, labeled and put in out-fridge for each event.
  • Implement and maintain the Statutory and Company standards of hygiene, health and safety and take any action as is necessary.
  • To ensure that all completed jobs are fully checked off before it leaves the unit.
  • To work closely with Head Chef and other chefs at each event to ensure that the function runs smoothly.
  • Ensure that all food is prepared with due care and attention, particularly in regard to guest’ dietary requirements, allergies, and any other food guidelines and regulations.

Required Experience
  • Bachelor degree/Diploma in Hotel Management/Hospitality or related field from the recognized university/college
  • Working experience of not less than 3- 4 years in the hotel industry/ in a well recognised hotel or lodge/Head camp chef.

Job Purpose
The Head chef will manage all aspects of Lodge/camps Kitchens; plan, organize, control and direct the work of employees responsible for preparation of all foods for guests and employees; oversee the kitchen cleanliness with Stewarding and kitchen maintenance with Engineering. The Head Chef is responsible for ensuring that the standard and quality of the food production and the hygiene within the department is maintained at the highest level at all times. This role is very much hands-on, requiring attention to detail and a positive work attitude.The Head chef will be in charge of the kitchen in his/her specific lodge/camp. That includes all activities relating to the kitchen. This also includes all other kitchens/food outlets.To ensure guests are well served, work together with other staff and management in a smooth, safe, and harmonious manner to ensure guests have a memorable stay.

Key Responsibilities:
  • Daily preparation and cooking of various meal components while ensuring kitchen prep cooking and cleaning tasks are completed in a timely manner and meet quality controls set by management .
  • Check guest’s dietaries on a daily basis so that the guests feel loved and taken care of.
  • Make sure of all dietary requirements and that all needs of guests are catered for, in a timely manner.
  • Ensure all staff are aware of their duties and what is expected of them.
  • Ensure all menus are followed and food standard is excellent at all times.
  • Teach new staff skills they require to perform their roles to the required standard.
  • Delegate duties to kitchen staff as per the menu requirements.
  • Work with the Executive chef to ensure standards and goals are met.
  • Oversee and monitor the work of kitchen staff to ensure all tasks are done as required.
  • Give staff feedback on their performance to enable staff development.
  • Ensure wastage is minimized by careful supervision of food preparation methods.
  • Ensure proper hygienic storage methods are utilized to prevent food loss.
  • Ensure the evening before that all picnic, packed meals and coffee box contents are clearly written down for the chefs.
  • Ensure the breakfast menu is decided in the evening before and that all ingredients are checked for quality.

Job Purpose
The CEO & Program Manager will oversee the first point of contact for CCA on all program operational matters, supporting implementation of strategic and innovative programs, projects or initiatives, partnership and network building. Will assist the growth and development of programs in the country , consistent with CCA policies, standards and strategic goals and will work closely with USAID.The Program Manager will be responsible for implementing major programs on the ground, managing partners and donors, monitoring activities, and contributing to the development of future programs.

Key Responsibilities:
  • Work closely with the project sponsor, cross-functional teams, and assigned project managers to plan and develop scope, deliverables, required resources, work plan, budget, and timing for new initiatives.
  • Contribute to strengthening CCA profile with major donors and implementing partners, including USAID/RTI,Government of Tanzania central authorities, international organizations and prospective funders.
  • Manage relationships with program partners, including sub-contractors, vendors and other local and international partners, ensuring that they deliver on agreed upon objectives within timeframe and budget.
  • Managing the programme’s budget on behalf of the CFO, monitoring expenditure and costs against delivered and realized benefits as the programme progresses.
  • Conduct data analyses and prepare reports on program implementation progress and impact for management, donors or other stakeholders.
  • Assist with compliance with USAID and other donor requirements, Government of Tanzania relevant regulations, and organizational policies and procedure.
  • Ensuring the delivery of new products or services from projects is to the appropriate level of quality, on time and within budget, in accordance with the programme plan and programme governance arrangements.

Job Purpose
The Grants Manager will provide overall technical support in the management of grants, facilitate training in program and finance management to grantees, support partners on grant management and assists in reviewing grants agreements. She/he is responsible for ensuring compliance with USAID rules and regulations, and legal and regulatory requirements governing the award. The Grants manager oversees the overall compliance in the activity implementation from the development of work plans and budgets, reporting, granting, and budget administration. Supporting donor proposal budgeting, analysis of institutional income, donor contract expenditure tracking, monitoring and providing management information on key risks, contributing to the implementation of improved financial systems and processes to facilitate better donor reporting and compliance.

Key Responsibilities:
  • Drafting proposals, grant application narratives, and budgets and collaborate to finalize with the Manager of Programs, Finance, and the Director.
  • Work closely with grantees to meet targets, timeframes, budgets and ensure compliance with USAID regulations.
  • Ensure grants or contracts are well administered and that program and support teams are fully informed of relevant donor compliance regulations and organization procedures to support on-track,on-time, and on-budget implementation. Review all grant/procurement activities for compliance with program policies and USAID regulations.
  • Creating the grants process, this includes working with CCA organizational teams to create workflows, and a synergy of responsibilities at each of these workflow states that are needed to support the grantmaking process from USAID and RTI respectively. This also includes working closely with beneficiaries/grantees/CCA of the grant to make sure the process is mutually beneficial for them and the grantmaking organization (USAID).
  • Supervising staff. Managing office staff , field staff and all staff within CCA/USAID/RTI/ULEA/EBN and its stakeholders and community that are a beneficiary of the grant in a respectful manner at all times. Grant managers are responsible, and need to make sure that they have a great environment to work in.
  • Review all grants/procurement activities for compliance with program policies and USAID regulations.
  • Monitor grant activities during their implementation to ensure on-time and high quality delivery of goods and services; provide continuous assessments of grantee performance against project objectives.
  • Ensure grants or contracts are well administered and that program and support teams are fully informed of relevant donor compliance regulations and organizations procedures to support on-track, on- budget implementation.
  • To advise programme and programme quality teams, finance, working groups on relevant donor requirements/compliance, potential funding opportunities, changes in donor priorities and ensuring quality grant management for all related projects.
  • Involved in developing and embedding best practices to comply with donor financial rules.
  • Prepare reports and other documentation as requested and in accordance with USAID/CCA directives. Supporting donor proposal budgeting, analysis of institutional income, donor contract expenditure tracking.
  • Coordinate regular grant monitoring, using appropriate grant management tools and through facilitation and support of regular and timely Grant Review, Opening,and Closing. Researching new funding and business development opportunities on a local, Regional, State level.

Required Experience.
  • Bachelor/ Masters degree in Project Management,Community Development studies,social sciences or related fields.
